Trim fat from pork. Cut pork into small strips. Toss pork, cornstarch, 1 tsp. soy sauce, salt and pepper. Cover and refrigerate for 20 minutes.
Heat oil in wok. Add pork, garlic and red pepper. Cook and stir for one minute. Add celery, mushrooms bean sprouts and green pepper for 2-3 more minutes. Add vermicelli, green onions and 1 Tbl. soy sauce. Cook for a few more minutes until everything looks ready.
NOTE- You could add shrimp to this dish. Add shrimp before the vermicelli. Cook until no longer pink.
