     Macedonian Lenten Baked Rice

Ingredients
1 1/2 Cup dry Uncle Ben's Original converted Rice
1 Large Chopped Onion (sweet) Spanish or sweet (not vidalia)
1 Cup Mazola Oil
1 Tbsp Smoked Paprika
1 fat can (28 oz) Whole Tomatoes squeezed up
2 heaping cups chopped up Garden Peppers (sweet) or more
1 1/2 tsp salt
Little black pepper
3 Cups of Water
 

Instructions
In 9x13 baking dish, pour dry rice evenly. In a pot saute onion in mazola oil. Fry up well & stir so not to burn. Add paprika, only cook a short time before adding tomatoe's. In large bowl pour fat can tomatoes & squeeze with hand to make it as fine as you can...it's really too much tomato's
Take half of it & pour in pot with the cooked onions...reserve other half in the frig for another time. Be sure to cook for a long while so everything doesn't taste just like the tomatoes...keep stirring. Add 2 heaping cups chopped up garden peppers....frozen is good or fresh ones.
Add salt, cook, taste if enough salt. Add little black pepper. Add 3 cups water and let cook awhile. Spoon sauce evenly over rice that's in baking dish. DO NOT stir it or the rice can pile in one place. Dab till sauce gets under the rice.
Bake at 400 degrees for 1 and half hour.
