     Sushi Rice Brown

1 cup short grain brown sticky rice
1 2/3 cup water
3 Tablespoons rice vinegar
2 Tablespoons sugar
1/2 teaspoon salt

Bring water just to a boil and add rice. Cover and simmer 20- 25 minutes until done. I turned the burner off when it was nearly done and left it sitting on the stove about 5 more minutes before removing lid.
While rice is cooking heat vinegar, sugar and salt in a small saucepan to dissolve sugar and salt. Place mixture in fridge to cool.
When rice is finished cooking, place in large plastic bowl. Stir continuously with a rice paddle and fan it to cool it quickly. When mixture is close to being completely cooled, stir in vinegar mixture. Continue to stir and fan rice until it is room temperature to the touch.
Place a tea towel over rice and something heavy on top (wooden cutting board, cooking pan, leaving a small opening where only the towel covers the bowl. The rice is ready to use for sushi.
