3 large ripe tomatoes, seeded and diced (about 1 lb)
1/2 medium zucchini, coarsely chopped (about 1/2 c)
1/4 c snipped fresh basil leaves
1 garlic clove, pressed
2 tsp balsamic vinegar
1/2 tsp olive oil
1/4 tsp salt
1/8 tsp ground black pepper
2 tbsp grated fresh Parmesan cheese
Instructions
Preheat over to 350. Arrange bread slices on flat
baking stone. Bake 10-12 minutes or until light
golden brown.
In small bowl, combine tomatoes, zucchini basil,
garlic, vinegar, oil, salt and pepper; mix gently.
Scoop tomato mixture over bread slices. Sprinkle
with Parmesan cheese. Serve immediately.
