Put ham bone and ham into a pot of hot water. Add whole onion. Simmer. Skim off any fat scum off the top. Add whole allspice and bay leaves. Season with salt and pepper.
Add 2 lb box of split peas. (If using quick split peas, don't add for another hour.) When peas start getting soft, add potatoes and carrots. Simmer until potatoes and carrots are done. Remove onion, bay leaves and allspice before serving.
