     Rillettes de Sardines

Ingredients
Canned sardines in oil (12 fish)
2 shallots (chopped)
Chives (chopped)
Juice of 1 lime
250 gms fromage frais (substitute well drained Greek yogurt)
50 gms capers
Salt to taste
Ground black pepper
 

Instructions
Drain and clean sardines (particularly vertebra and any large bones/fins/etc.). Put in bowl and crush them with a pestle (or a fork if you don't have one). Mix fromage frais, chives, shallots, lime juice, and capers in a bowl. Salt and pepper. Mash in sardines with a fork. Let blend in refrigerator for an hour, minimum. Serve with crackers or toasted baguette rounds rubbed with a clove of garlic.
