1 Red, Orange or Yellow Bell Pepper cut into 1 in slices
1 Cup Snow Peas
4 green onions cut into 1 inch slices
1 TSP Cornstarch
Jasmine or Brown Rice
Instructions
Whisk together apricot preserves, soy sauce and corn starch and set aside
Cut up pork into 1 inch slices. Heat wok on high heat then add 1 TBS Peanut or Olive oil. Add pork ans stir fry stirring frequently until pork is browned and no longer pink. Remove from wok and set aside.
In wok, add 1 more TBL spoon of oil and add garlic and cook about 20 - 30 seconds. Add carrots and saute for about 3 minutes. Add broccoli, onions, garlic, snap peas and stir fry about 3 minutes.
Add pork to wok and continue stirring for about 1 minute then add soy sauce mixture and cook an additional 2 minutes until sauce begins to thicken slightly. Serve hot over jasmin or brown rice.
