In a large bowl mix the basil, flour and yeast together.

Add water and mix with a fork or wooden spatula to moisten. Scrape the sides and keep the mixture in the center of the bowl; the mixture should be slightly sticky.
Let stand in this bowl covered with a tight lid or plastic wrap (on the counter) for 12-18 hours.

The next day preheat an ovenproof 3 1/2-4 quart pot with a lid in a 450 degree oven. ( A cast iron pot works well). Make sure the pot is thoroughly heated so leave the pot in the 450 degree oven for about 15 minutes before taking out.
Remove the pot careful from the oven and place on the stove or wire rack. Sprinkle the bottom of the hot pot with a little bit of flour to prevent sticking.
Flour your hands and sprinkle flour on the top of the dough mixture. Gently shape it into a ball and place in the centre of the hot pot. Do NOT burn your hands.
Replace the lid and put back in the 450 degree oven for 30 minutes.

Remove the lid from the pot and bake an additional 15-20 minutes or until the top is golden brown.
There should be a nice crust on the top and bottom.
You can add other ingredients as well such as seeds, herbs, dried fruit or shredded cheese. Do this during step 1.
