     Chipotle Corn and Pico De Gallo

Ingredients
CORN
2 lb corn
1 red onion
4 jalapenos (used canned)
1 cup cilantro
4 T lime juice
2 t salt
 
PICO DE GALLO
3-4 tomatoes, diced
1/2 red onion, diced
1/4 jalapeno, diced
5-7 stems of cilantro
juice of 1 lime or 2 T lime juice
1/4 t kosher salt

Instructions
CORN- Chop onion and jalapenos with food processor. Add cilantro to food processor and chop finely. Mix chopped peppers into corn. pour lime juice and salt over mixture and stir.
PICO DE GALLO- Chop the cilantro finely and add chopped onion, tomato and jalapeno. Stir in salt and juice lime over the top. Place in fridge for about an hour to marinade ingredients together.
