     No Fail French Bread

Ingredients
2 tbsp yeast
1/2 cup warm water
2 cups hot water
3 tbsp sugar
1 tbsp sea Or Kosher salt
5 tbsp vegetable or canola oil (1/3 cup)
6. Ups flour
1 egg for glazing optional
 
Approximately 2.5 oz for rolls

Instructions
Dissolve yeast in warm water. In a separate large bowl (can use mixer bowl) hot water,sugar, salt, oil, and 3 cups flour. Mix together with large wooden spoon of paddle attachment for mixer. Change to dough hook and add remaining 3 cups of flour one cup at a time. After all flour is mixed in, let stand for 10 minutes. When dough is risen mix down until dough is deflated. Repeat 5 times, every 10 minutes, for a total of 60 minutes. Divide dough in thirds. Roll in 9x12 rectangle on a floured surface. Roll the dough like a jelly roll - long way. Place dough on a greased cookie sheet with seam side down. Two loaves fit in one pan. Score bread across the top 3 or 4 times and brush with beaten egg. Let rise 20-30 minutes in a warm place. Bake at 375 for 20-25 minutes until golden brown. If convection oven is used 375 for 18-20 minutes. If you forget to punch down every ten minutes just make sure you let the dough double in bulk abt 45 minutes.
