Cook spinach in olive oil, lemon and garlic.
I used 1 lb. chicken breasts' and sliced them lengthwise (filet) before
pounding. This will yield th 4 servings.
Place spinach and Feta cheese on thin chicken beasts. Roll and secure
with toothpicks.
Dredge in eggs and seasoned bread crumbs.
Brown in frying pan and set aside.
Sauté mushrooms in oven safe frying pan approximately 2-3 minutes. Add
wine to deglaze pan. Stir in chicken broth. Whisk in flour and simmer
for 10-15 minutes or until sauce reaches desired thickness. Add more
flour as needed.
Place chicken in pan, spoon sauce over chicken and bake at 350 degrees
for 30 minutes.

Suggestions
Serve over rice cooked in chicken broth.
