4 boneless pork loin chops, 3/4 inch thick (5 ounces each), well trimmed
1/4 teaspoon coarsely ground black pepper
1/2 teaspoon salt
4 medium green onions, cut into 1-inch diagonal slices
8 ounces snow peas, strings removed
1 tablespoon minced, peeled fresh ginger
3 garlic cloves, crushed with garlic press
1/4 cup creamy peanut butter
1 tablespoon sugar
1 tablespoon soy sauce
1/8 teaspoon ground red pepper (cayenne)
Instructions
1. Pat pork chops dry with paper towels. Sprinkle
pork chops with pepper and 1/4 teaspoon salt
2. Heat nonstick 12-inch skillet over medium-high
heat until hot. Add pork chops and cook 4 minutes;
turn pork over and cook 3 to 4 minutes longer, until
lightly browned on the outside and still slightly
pink on the inside. Transfer pork to platter, cover
with foil to keep warm.
3. To same skillet, add green onions, snow peas, and
1/4 teaspoon salt, and cook over medium heat 4 minutes,
stirring frequently. Stir in ginger and garlic; cook 1
minute. Return pork to skillet
4. Meanwhile, in small bowl, stir peanut butter, sugar,
soy sauce, ground red pepper, and 3/4 cup water until
blended.
5. Pour peanut-butter mixture into same skillet; heat
to boiling over medium-high heat. Reduce heat to low;
simmer 1 minute.
