preheat oven to 400 degrees. In skillet,toast pine
nuts. Remove from pan.
In bowl, mix eggs, cheeses, S&P and oregano.
Lightly mix. Add pine nuts and mix.
In pan, add spinach and nutmeg. Saute until
wilted. Zest lemon and add butter and toss.
Wet a big piece of parchment paper and crinkle up.
Lay it out on counter. Coat it with oil. Lay
sheets of pastry out into a big square, using 4
sheets. Pat down, sprinkle with paprika then
repeat layers 4 times.
Mix spinach into egg mixture. Put pastry into a
cast iron frying pan, shaping it into pan. Add
mixture then layer of cheese.Flip hanging
pieces of pastry over top. Remove extra
parchment paper. Heat up on stove to crisp
bottom. Sprinkle rosemary on top. Bake for 15
minutes or so. Remove from pan, slice and serve
with fresh salads.
