     Beans and Greens

Ingredients
3 cups black-eyed peas
Coconut oil
1 onion, chopped
3 tsp. minced garlic
1 tsp. dried thyme
1 tsp. dried bay leaves
1 large bunch of Swiss chard, kale or other greens
salt
pepper
 

Instructions
Cook the black-eyed peas in water. In a separate skillet, heat coconut oil. Add onions and garlic; sauté with thyme and bay leaves until tender. After cooking peas ˝ hour, add the onion mixture and chopped greens. Cook ˝ hour longer. Season with salt and pepper. Enjoy!
