     Dandelion Jelly

Ingredients
2-3 cups lightly packed dandelion flowers with as much green snipped off as possible
4 c water
4 c sugar
2 T lemon juice
1 box powdered certo/pectin
 

Instructions
Cut the green part off of the flowers. Put yellow into a large jar. Pour 4 c boiling water over the flowers. Cover lightly and allow to sit on the counter for 24 hours. Strain flowers well squeezing out as much dandelion tea as possible.
Place into a Large pot 4 c dandelion tea, lemon juice and certo. Bring to a boil.
Add sugar and return to a boil and boil hard for 1-2 min while constantly stirring.
Remove from heat and bottle into sterilized jars. Process for 10 min in a boiling water bath. I skipped this and my jelly did not set. Have spoken to others that did boiling bath and their jelly set well. This has surprisingly good flavor . Like a lemony honey.
