Category   Entrees - Maindishes
Sub Category   None
Servings   6

Ingredients
1 lb. lean ground beef
1/3 Cup onion, chopped
1/4 Cup jalapeno slices
15 oz. can diced tomates
15 oz can whole corn, drained
15 oz. can black beans, drained and rinsed
1-1/4 oz. pkg taco seasoning
8 small corn tortillas
1/3 Cup Mexican blend cheese

1/3 Cup cilantro, chopped
3/4 Cup sour cream

Instructions
Preheat oven to 350 deg. Brown ground beef and onion until cooked. Drain well. Return beef to skillet. Add jalapenos, tomatoes, corn, black beans and taco seasoning and mix well. Reduce heat and simmer for 5 minutes.
Spray 12 X 8, (2 quart) baking dish with Pam. Cut each tortilla in half. Place 8 halves in bottom of dish, overlapping slightly. Place half of beef mixture in dish (2-3/4 Cups is half). Top beef with sour cream. Them another layer of tortilla halves and the rest of the beef.(Casserole can be frozen at this point.)
Bake casserole for 25 minutes. Remove from oven and sprinkle with cilantro, then cheese. Let stand until cheese is melted.
Ser with lettuce, tomatoes, black olives or other garnishes. I served with extra sour cream, salsa and taco chips.

NOTE- This dish was really, really good!! If you freeze it, refrigerate overnite to thaw before baking.
