     Blintzes - Cheese Blintzes

Ingredients
2, 8 oz. cream cheese, softened
2, l lb. loaves fresh white bread
1/2 Cup sugar
2 egg yolks
2 sticks butte, meltedr
1 Cup sugar mixed with 4 tsp.. cinnamon
 

Instructions
Mix cream cheese with 1/2 Cup plain sugar and egg yolks.
Trim crust from bread and rolls each slice with rolling pin until flat. Spread cheese mixture onto each slice of bread.
Roll up bread and dip into melted butter, then roll into cinnamon/sugar mixture. Place on cookie sheet and freeze.
When ready to serve, bake at 400 deg. for about 15 minutes. Do not thaw before baking.
