1/2 tsp. dill weed, 1/2 tsp. minced chives or green onion
1/4 tsp. cayenne pepper, 1/4 tsp. salt
1-1/2 Cups soft bread crumbs
FISH -
6 flounder fillets, 3 oz each
5 Tbl. butter, melted
2 Tbl. lemon juice
1 tsp. mincerd fresh parsley to sprinkle on top
1/2 tsp. paprike, to sprinkle on top
salt and pepper to taste
Instructions
Preheat oven to 375 deg. In a large skillet melt butter. Add onion, celery and green pepper and saute' until tender.
Add shrimp and cook until shrimp turns pink. Add broth, pimiento, dill, Worcestershire sauce, chives, salt and cayenne. Heat through. Remove from heat and stir in the bread crumbs.
Spoon about 1/2 cup stuffing onto each fillet and roll up. Place seam side down in a greased 13 X 9 baking dish. Drizzle with butter and lemon juice. Sprinkle with parsley and paprika. Salt and pepper.
Bake uncovered for 20 to 25 minutes or until fillet flakes easily with a fork.
