     Lemon Zucchini Cake

Ingredients
1 & 1/4 cup sugar
6 Tablespoons olive oil
2 eggs
1/2 cup vanilla almondmilk
2 Tablespoons lemon juice
1 teaspoon almond or vanilla extract
2 cups cake flour
1 & 1/4 teaspoon baking powder
1/2 teaspoon kosher salt
 
1 & 1/2 cup shredded zucchini
1 Tablespoon lemon zest
GLAZE
1 cup pudding sugar
1-2 Tablespoons lemon juice

Instructions
- Spray bread pan and insert parchment paper Combine dry ingredients and set aside - Combine sugar and olive oil - Add eggs and almond milk - add lemon juice and extract - add flour just till combined - Fold in zucchini and zest - Pour into prepared pan and bake 45-55 min - Use parchment paper to lift from pan
Substitutions 1 cup All purpose flour minus 2 Tablespoons plus 2 Tablespoon cornstarch = 1 cup cake flour
