Preheat oven to 400 degrees.
Place chopped squash in a skillet with some water over medium-high heat, cook for 10 minutes
Drain squash, add onion to the skillet and saute until wilted. Add salt and pepper to taste.

Place the squash mixture in a well-greased 9x9 baking dish.
Mix together the beaten egg and 1/2 cup half and half and pour mixture over the squash in the baking dish, mix well.

|
Top squash with 1 cup shredded cheddar cheese.
Mix 1/2 cup GF breadcrumbs with 1/4 cup of parmesean cheese in a bowl. Stir to combine. Add the melted butter and stir to combine.

|
Sprinkle bread crumb mix over the top of squash.
Bake for 20 minutes or until brown and bubbly. Top with freshly chopped green onions.
