     (OZ) RUSTIC TOMATO SOUP

Ingredients
2 Lg. vine-ripened TOMATOES - diced, with juice
1/2 Lg. ONION - diced
1 bulb of GARLIC - peeled and chopped
2 cups WATER
1-2 Tbl. TOMATO PASTE
1 Tbl. OLIVE OIL
2 BOUILLON CUBES -any
2 BAY LEAVES
3/4 - 1 teas. dried BASIL-
 
SALT - to taste
1 Tbl. real BUTTER
(optional) 1/4 cup MILK or CREAM

Instructions
Add oil, onion, and bay leaves to pot and saute until onions are soft. Add garlic and go another couple minutes. Add water and bouillon and bring to a boil until bouillon dissolves.
Add tomatoes and juices, tomato paste, and basil. Bring back to a boil for a couple minutes, then reduce heat and simmer 30-40 minutes to desired consistency. Remove bay leaves. Stir in butter (and milk/ cream if using) and taste for salt.
This can be blended if desired, but not necessary. Serve topped with shredded cheddar, croutons, or fresh basil.
NOTE- Celery seed, red pepper flakes, or diced red bell pepper might be good additions.
Serving Suggestions
Serve on it's own or with Grilled Cheese Sandwiches.
