2 cloves Garlic pressed and diced plus 5 cloves peeled & sliced
Juice of 1 large lemon
Several grinds of black pepper
2.5 lb Frying Chicken, cut up into serving pieces
2 TBL butter
2 TBL Olive Oil
2/3 cup Dry White Wine (Pinot Griego is good)
1/2 cup chicken broth
1 TBL Dijon Mustard
1 Bunch Scallions (Green onions) diced
1 handful of fresh sliced mushrooms (Bellas are nice)
1 bay leaf
1/2 tsp thyme
Salt to taste (depends on saltiness of Chicken broth)
Optional- Gluten-free cornstarch
Instructions
Combine 2 cloves pressed garlic with lemon and
fresh ground pepper in a zip-lock bag. Rub
marinade into chicken and refrigerate for at
least an hour. Then heat the butter and olive
oil together in a fry pan and brown the chicken-
-you want it to have some color so not so white.
Takes about 15 minutes.
While the chicken is frying, combine in a bowl-
wine, chicken broth, Dijon mustard. Then add in
the scallions, mushrooms, 5 whole cloves of
garlic, bay leaf and thyme. (I save adding the
salt until it is cooked together.) Once the
chicken is cooked, add the wine mixture to the
fry pan and simmer for about 25 minutes, until
the chicken is tender. (I usually cover the pan
to keep in the juices as you can always cook
down the juices later.)
Once the chicken is done, remove it and the bay
leaf from the pan and cook the juices down to
thicken the sauce. (Or if you are like me, you
want lots of the delicious sauce, so I may add
more broth or water, bring it to a boil and then
dissolve some cornstarch in a small amount of
water and add it to the sauce in the pan.) Add
the chicken back in and heat it up to serving
temperature. Serve with rice or pasta with lots
of the delicious sauce!! If I use chicken
tenderloin cut up in bite size pieces, I don't
even take the chicken out. I just add the
cornstarch mix to the pan and bring it to a
boil. If you are making it gluten free, make
sure the Cornstarch is gluten free as there are
two kinds.
