     Bread and Butter Pickles

Servings   9 pints

Cucumbers, 9 medium of 7 large
White onions - 3 large
3/4 c. Salt
1 qt. Vinegar
4 c. Sugar
2 T. Celery seed
2 T. Mustard seed
2. Water

Wash cucumbers and slice thin. Slice onions thin. Arrange cucumbers and sliced onions in layers in an earthware crock or bowl. Sprinkle each layer with salt. Cover and let stand 3 hours.
Drain any juice which has accumulated. Combine water, vinegar, sugar, celery seed and mustard seed. Bring to a boil, stirring until sugar is dissolved. Boil for 3 minutes.
Add cucumber/onion mixture and bring once more to a boil, but do not boil.
Pack immediately into hot sterilized jars. Seal at once.
