In a large skillet heat the olive oil over medium heat. Cook the onion and
diced peppers until soft, approximately 5 minutes. Stir in tomato paste and
garlic, cooking 1 minute more. Add the ground turkey and cook, breaking up
the meat with a wooden spoon until no longer pink, approximately 10 minutes.
Drain any remaining fat.
Stir in the cauliflower and diced tomatoes. season with oregono, salt and
pepper. Let simmer for another 5 minutes.
Place peppers cut side up in a baking dish and drizzle with the EVO. Spoon
cooked mixture into each pepper and top with the Feta crumbles. Cover the
baking dish with foil. Bake until peppers are tender, approximately 35
minutes. Uncover and bake until cheese is bubbly, approximatey 10 minutes
Garnish with parsley before serving.
