1 teaspoon olive oil
3/4 cup chopped red onion, divided
2 tablespoons seeded minced jalapeño
1 1/2 tablespoons all-purpose flour
2 teaspoons ground cumin
2 teaspoons chili powder
2/3 cup unsalted beef stock
2 cooked ground beef patties finely crumbled
1 cup drained unsalted canned pinto beans

2 ounces preshredded part-skim mozzarella cheese (about 1/2 cup)

1/2 cup chopped avocado
2 1/2 cups baked tortilla chips

Instructions
