     Pasta - Pat's Pasta

1 chicken breast
3 garlic cloves, sliced
grated parmesan
1/4 Cup pine nuts
16 oz box penne pasta
Jar of marinated artichoke hearts
Jar of sun julienne cut dried tomatoes
Small bag of spinach
3 Tbl. Olive Oil
Salt and pepper

Pound down the chicken and cut into small pieces. Marinate the chicken in Italian dressing for about an hour. Brown the pine nuts. Salt and pepper the chicken. Quickly brown the chicken in oil for about 2 minutes and remove from pan.
Stir in the garlic slices, artichoke hearts and sun dried tomatoes and cook this until the garlic is soft, at least 5 minutes. Stir in the spinach for one minute. Add the chicken back to this pan and heat for a couple of minutes. Add this mixture to the pasta. Add the pine nuts. Serve with grated parmesan.
NOTE- The chicken needs to be pounded and marinated to be tender, but we really enjoyed it. Possibly substitute shrimp. Definitely cut in half for 2 people. Still enough left over for lunches.
