Ingredients
10 lbs of potatoes, peeled and boiled with dash of salt
boil, rice and cool them
eggs 6 or 7 of them 1 EGG PER BATCH
flour 2 and a half cups per batch
 

Instructions
For each batch of gnocchi you will need 2 and a half cups of potatoes 2 and a half cups of flour and 1 egg Boil gnocchi in a large pot of water with a touch of salt. cook until the float to the top like perogies. Add the flour and potatoes together mixing with your hands on the counter or a large board Make a well and add the egg With a fork mix the egg in the well then start to combine mixture with your hands until well combined Don't over work it Then cut a piece of and make a snake. Cute the snake into bite size pieces and make gnocchi
There are many ways to serve gnocchi. We use spaghetti sauce Options you can toss with any kind of sauce you like. You could boil them and then toss in a pan with EVO. broccoli Rabbi, Swiss Char, etc. your choice You can make Olive Garden gnocchi soup
