While the soup is boiling fry the onions and celery
Add to the soup
Use the immersion blender and blend till smooth
Add the minced garlic
Add 1 cup of grated medium cheddar
At this point you can add more chicken broth if too thick, or add 1
chicken bullion cube and 2 more cups of water
Simmer 30 minutes
Top with bacon crumbled, green onions and sour cream if you
want
