1 1/2 cups all purpose flour or Kodiak buttermilk pancake
1 tsp cinnamon
1/4 ground nutmeg
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup unsweetened applesauce or non fat greek yogurt
1/2 cup pumpkin puree
1/2 cup white or brown sugar substitute
1 egg at room temp
1 tbsp light butter or 2 tbsp unsweetened applesauce
1/2 cup water
1 tsp vanilla
cinnamon and sugar topping
butter spray
1/8 cup sugar substitute
1 tsp cinnamon
Instructions
Preheat oven to 350. mix flour, baking powder, salt,
and spices. In separate bowl, whisk yogurt or
applesauce, pumpkin, egg, brown sugar, vanilla,
water, and melted butter or applesauce.
Gradually add dry ingredients. Mix until combined,
do not over mix. put in ziplock bag to make piping
bag. Bake 10-13 minutes. Allow to cool 5 minutes.
Once they have cooled spray both sides with butter
spray and dust both sides with sugar mixture. Store
leftovers for up to 3 days in fridge.
Blue Plan use either 1/4 unsweetened applesauce or
1/4 non fat greek yogurt since both are zero
points.
