Heat a drizzle of olive oil in a skillet. Add
sausage and cook until browned. Add garlic and cook
until fragrant, about 1 minute. Add tomatoes and
cook 1-2 minutes.
Add orzo and italian seasoning, cook, stirring,
until orzo is coated in juices, 1 minute.
Add 3 cups water, stock concentrate, and season
with salt and pepper to taste. Bring to a boil,
then lower to medium. Let simmer, stirring
occasionally, until orzo is done. 8-11 minutes.
Once orzo is done stir in spinach until wilted.
Then stir in mozzarella cheese. If mixture is too
dry, add small amount of water.
