     Potato Salad with Bacon

Ingredients
3 pounds petite Yukon Gold potatoes, cut in half
1 TB white vinegar
12 oz package bacon cut into small pieces
1/3 cup scallions
2 tsp dried parsley, more or less to enhance look
1 cup mayonaise
1/2 tsp garlic powder
1 tsp white vinegar
1 tsp spicy brown mustard or Dijon
 
1 tsp smoked paprika
salt and pepper

Instructions
Cut potatoes into halves and place in pot. Cover potatoes with water and boil over high heat until cooked, approx 15 minutes from when they start to boil.
Once cooked, drain and rinse under cold water allowing them to drain in a colander. Return potatoes to the pot and sprinkle with 1 TB of vinegar and lightly toss. Let them cool for about 15 minutes or so.
Cut the bacon into small pieces and cook in a skillet over medium or medium high heat until crispy. Combine mayonaise, garlic powder, 1 tsp white vinegar, mustard, and smoked paprika to make dressing.
When the potatoes have cooled, add them to a bowl that is large enough to comfortably toss the ingredients together. Toss potatoes with the dressing, parsley, scallions and bacon. Spoon the bacon directly from the frying pan adding a little grease for extra flavor. Serve immediately. Its great warm or can be chilled to serve later.
