Heat oven to 350 and prepare cupcake tins with
papers.
|
|
|
Combine first 5 dry ingredients and add the wet
ingredients. Fill the muffin tins no more than
1/2 full.

|
In a separate bowl combine the ingredients for the
filling and place 1 heaping tsp or more on the
batter in each muffin tin. Sprinkle with sugar and
chopped walnuts (optional but great!)
|
|
|
Bake for 30-35 minutes. Cool in tins for 10
minutes then transfer to wire racks to completely
cool. Store leftovers in the fridge.
