     Potato- Twice Baked Potatoes

Ingredients
4 oven baked potatoes
2 oz cream cheese
2 TB chives or chopped green onion
1/4 tsp basil
1/8 tsp salt and dash of pepper
3-4 TB milk
 

Instructions
Bake potatoes in the oven unwrapped so the skins get crispy. Cool a bit so not too hot to handle. Cut each potato in half lengthwise leaving the ends entact. Scoop insides out into a bowl.
Mash potato with all the ingredients listed adding more milk for desired consistency, or a little sour cream. Spoon back into shells and place in baking dish.
Cover with foil and back 10 min at 375.
Uncover top with grated cheese and butter and back 10 more min. Garnish with sour cream and chives.
