On low heat, saute onion in butter 4-5 minutes
until translucent. Add garlic and continue one
minute. Add flour and stir constantly 2 minutes or
until incorporated and turning brown.
Add water and bouillon, half and half. Add
carrots, broccoli, salt, pepper, and nutmeg. Bring
to a low simmer for about 25 minutes, stirring
often.
Turn off heat until there are no longer bubbles.
Slowly stir in paprika and cheese. Taste and
adjust spice. Serve immediately.
TIP- Shred your own cheese because the prepackaged kind can be clumpy
or grainy
TIP- spray grater with cooking spray to make clean
up easier.

Garnish with extra cheddar, croutons, or real bacon bits.
