     (OZ) BROCCOLI CHEDDAR SOUP

Ingredients
2 - 2 1/2 TBL real BUTTER
1/2 small ONION - diced
3 cloves fresh GARLIC - minced
2 TBL all purpose FLOUR
1 cup WATER plus 1 CHICKEN BOUILLON cube
1 cup HALF-AND-HALF
1/4 cup fine shredded CARROT
1 1/2 cup fresh BROCCOLI FLORETS - chopped small
1 1/2 cup fresh shredded EXTRA SHARP CHEDDAR
 
1/8 teas SALT
1/8 teas. coarse BLACK PEPPER
1.8 teas ground NUTMEG
1/8 teas. SMOKED PAPRIKA

Instructions
On low heat, saute onion in butter 4-5 minutes until translucent. Add garlic and continue one minute. Add flour and stir constantly 2 minutes or until incorporated and turning brown.
Add water and bouillon, half and half. Add carrots, broccoli, salt, pepper, and nutmeg. Bring to a low simmer for about 25 minutes, stirring often.
Turn off heat until there are no longer bubbles. Slowly stir in paprika and cheese. Taste and adjust spice. Serve immediately.
TIP- Shred your own cheese because the prepackaged kind can be clumpy or grainy TIP- spray grater with cooking spray to make clean up easier.
Serving Suggestions
Garnish with extra cheddar, croutons, or real bacon bits.
