     Stuffed leeks

Ingredients
4 leeks
500g minced beef and pork
2 eggs
1dl plain flour
1dl milk
1 medium onion
Salt
Pepper
4 tbsp oil or butter
 

Instructions
Chop onion finely. Mix mince, eggs, flour, milk, onion, salt and pepper. Place in fridge for min. 30 minutes.
Bring a lot of water to the boil. Clean the leeks and cut off tops and bottoms. Cut each leek across middle. Put the leeks into the boiling water and blanch for a couple of minutes (remove when water begins to boil again).
Spread meat mixture in squares sized to wrap each piece of leek. Is easiest to do on a piece of baking paper. Wrap meat mix around leeks leaving baking paper around then wrap in alufoil. Boil for 15 minutes. Remove alufoil and baking paper. Roll the stuffed leeks in breadcrumbs and fry in oil or butter until golden
Serving Suggestions
Serve with creamed potatoes, carrots, soft fried onions and broccoli.
