2/3 Cup fresh sour orange juice, combine fresh orange and fresh lime juice
1/3 Cup olive oil
1/2 tsp. dried oregano
1/2 tsp. cumin
salt and pepper to taste
Instructions
Marinate the shrimp and scallops in MOJO sauce for one hour. Save
some sauce for basting. Slice peppers into one inch sections. Thread
the shrimp, scallops, pineapple, tomatoes and peppers on the
skewer.
Grill for four minutes on each side, mopping with MOJO sauce.
MOJO Sauce - Place garlic in a mortar and pestle. Add 1/2 tsp. salt and work into a smooth
paste. In a small bowl, whisk together garlic, sour orange juice, oil, oregano, cumin. Season with
salt and pepper.
