     Sue's Pasta e Fagioli

Ingredients
1 16 oz can of white/red or any bean - rinsed
3-5 cups of your homemade Sunday sauce
The Holy Trinity-
3 stalks of celery diced
2 long carrots diced
1 med/large onion diced
EVOO
garlic and italian seasonings that you like and to taste
1 cup ditalini or small shell/elbow pasta
 
Fresh parn cheese
water as needed - quart worth give or take
Splash of white wine won't hurt either! -)
If you want meat - add 1-2 cups of diced sausage or pepperoni

Instructions
EVOO in bottom of stock pan, add the holy trinity and saute until onions are clear. Add the sauce, beans and water. Add your spices or meat to the mixture and let it come to a boil. After about 15-20 take the back of a wooden spoon and crush some of the beans (thickens the fagioli). Add the pasta and cook until done. Serve in a bowl with fresh parm on top and nice crispy homemade bread!
Serving Suggestions
Can make it vegetarian or add sausage/pepperoni/use gluten free pasta/different types of beans - switch it up!
