     Portobello Mushroom

Ingredients
2 mushroom caps
3 oz fresh spinach
tomato paste
sliced tomato
goat cheese
panko
onion
garlic
butter
 
salt
pepper

Instructions
Rinse mushroom caps. Olive oil, salt and pepper. Bake in oven for 15-20 min. 375. Olive oil in frypan, add chopped onion and cook several minutes, add chopped spinach and cook until wilted. Melt butter in fry pan, add garlic and cook couple of minutes, add 2 Tbs. panko and stir to lightly brown. Remove mushrooms from oven. Towel off liquid.
Spread with tomato paste, place one layer of fresh tomato on top. Divide spinach mix and spread on tomato. Add small slice of goat cheese. Top with panko. Return to oven 20-25 minutes.
