     Lamb (or turkey) ragu

Ingredients
2 T olive oil
1 med onion, chopped
2 med carrots, diced
2 stalks celer, chopped
2 cloves garlic minced
2 T tomato paste
2 lb ground lamb or turkey
1/2 c wine red or white
2-28 qz oans crushed tomatoes
 
2 tsp thyme, rosemary,oregano
1/4 tsp red pepper flakes

Instructions
large pot, heat oil. Add veggies and cook 5 min. add garlic, tomato paste and cook til fragrant 1 min. Add lamb until no longer pink, 6 min. Add wine and reduce 5 min. Add tomatoes and fresh herbs, salt and pepper. Bring to boil and simmer 1 hour. I think instant pot would work. Good with spaghetti or other pasta.
