     Janice’s Basil Pesto Pasta

Bow tie pasta , cook
4 - garlic cloves minced
1 tsp olive oil
1/4 cup water
1/4 cup white wine
1 cup julienne carrots (2 inch pieces)
2 cup asparagus (2 inch pieces)
1 red pepper (2 inch pieces)
2 cups fresh pea pods
1 medium zucchini with peel, julienned
2 tbsps - basil pesto
6 tbsps - spreadable cream cheese
2 tbsps Parmesan cheese
Salt and pepper

Sauté garlic and olive oil. Add water and wine, bring to a boil. Add carrots and cover 1 minute. Add asparagus and red pepper - cover 2 minutes. Add pea pods and cover 1 minute. Add zucchini. Toss vegetables with cooked pasta (and chicken) Add pesto, cream cheese, Parmesan cheese and salt and pepper. Toss, Mix and serve
Variations - double the vegetables - fry chopped chicken and add in - can remove vegetables with a slotted spoon. Add 3 cups chopped tomatoes and cook. Stir in pasta and cream cheese and simmer till bubbling. Toss cooked pasta, vegetable and liquid. Sprinkle with Parmesan cheese.
