     Rolls

Category   Desserts - Breads
Sub Category   Holiday Dish
Servings   36

Ingredients
2 cups milk
2 Tbsp (2 pkgs) active dry yeast
1/3 cup warm water
6 Tbsp butter
1/4 cup sugar
2 tsp salt
3 eggs, well beaten
5-6 cups all-purpose flour
1/4 cup (approx) butter, melted

Instructions
In small saucepan scald milk (milk has begun to steam and show small bubbles or 180 degrees) then remove from burner. In small bowl, dissolve yeast in water. To scalded milk, add 6 Tbsp butter, sugar, and salt. Let cool down until warm. In large mixer bowl, beat eggs very well and add milk mixture, yeast, and 2 cups flour, beating well. Add 2 more cups flour and beat again. With wooden or slotted spoon, stir in 1 cup more flour then add the last cup of flour, mixing with spoon. Dough will be thick but sticky. Cover bowl and set aside to rise in a warm place, about 2 hours, stirring down every time dough reaches top of bowl.
Melt butter. Grease 9x13 pans or baking sheets with softened butter (preferred) or cooking spray. On well-floured surface turn out dough and barely knead it. Lightly roll out with dough about 3/8 inches thick. Cut with round cutter or cup. Dip about half the circle in melted butter and fold over (butter on inside) so top edge slightly overlaps the bottom. Place on baking sheet not too far apart. As the rolls rise, they will push together slightly and rise up instead of out. Let raise until about twice the original size 30-60 minutes. Bake at 400 for 10-15 minutes or until lightly brown. Remove carefully from pan and serve hot.
Makes about 3 dozen large rolls.
