     Zopf (Vegan)

Ingredients
75g White Spelt Flour
425g Plain Flour
200ml Soya Milk
100ml Oat Cream
75g melted Vegan butter
15g fresh milk
1 tsp salt
1 tsp sugar
Aqua Faba & soya milk for glaze.
 

Instructions
Melt butter in pan and add milk & cream. Make sure it is at body temp. Add a little to the yeast and sugar. Reserve the rest. Wait for yeast to activate (10 to 15 mins).
In a large bowl combine flours and salt. Add yeast mix and the rest of the liquid. Mix until combined, turn out onto floured surface. Kneed for 10 mins until smooth. Place in bowl, cover and prove for 90 mins.
Halve the dough and roll into 2 long strings. Braid. Place loaf on lined baking tray. Glaze and leave for 30 mins to prove.
Heat oven to 200c (180 fan), bake for 35 mins. Glaze again at 10 and 20 mins. Tap bottom, which should sound hollow. Cool on wire rack.
