Heat olive oil in instant pot, add pork and
onions, cook until pork starts browning. Make
chili sauce. Take dried chilis, remove stems
and shake out seeds. Put into a pot with
boiling water, simmer for 10 to 15 minutes.
Remove the soaked chilies and add to a blender
with some of the water they were boiled in. Add
tomatoes, blend until smooth. Strain through
mesh strainer to remove chunks or seeds. Add
to instant pot with browned meat and cooked
onions. Add the hominy and garlic and cumin.
Add water to max fill line on instant pot.
Seal pot and cok on high pressure for 25
minutes, allow to natural release for 15
minutes.
