     Beef Tenderloin with Mushroom Sauce

Ingredients
4 ounces button mushrooms
1 garlic clove
10 ounces beef tenderloin
1 package beef demi-glace sauce (recommend Savory Choice from amazon)
2 tablespoons sour cream
salt
pepper
1 tablespoon butter.
 

Instructions
Trim and thinly slice mushrooms. Mince garlic. Season steaks all over with salt and pepper. Heat a large drizzle of olive oil in a large pan over medium high heat. Add steaks and cook to desired doneness, 4-6 minutes per side. Remove from pan and set aside to rest.
Heat another drizzle of olive oil in same pan over medium high heat. Add mushrooms and cook, stirring, until softened and lightly browned, 3-4 minutes. Add garlic and cook until fragrant, about 1 minute.
Stir in demi-glace sauce and 1/4 cup water, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then reduce heat to medium and cook until thickened, 2-3 minutes. Turn off heat and stir in sour cream and 1 tablespoon butter until melted.
Serve sauce over steaks.
