     Chicken Bacon Rolls

Category   Breakfast - Brunch
Sub Category   None

Ingredients
8 thinly sliced chicken cutlets
Kosher salt and fresh black pepper
4 slices provolone
fresh sage or dried sage
8 slices uncooked bacon
1 tsp. garlic, minced
1/2 Cup Marala wine
1/2 Cup low sodium chicken broth

Instructions
Pound chicken if necessary until very thin. Sprinkle with salt and pepper. Place provolone on each cutlet and sage or a sprinkle of dried sage. Roll up each cutlet and wrap bacon around. Trim so that the bacon does not overlap. Skewer with toothpick.
Heat oven-proof skillet on medium high heat. Add chicken and brown on all sides, turning with tongs, about 8 minutes. Transfer skillet to 350 deg. oven and bake 10 to 12 minutes until 165 deg. Use meat thermometer. Place chicken on serving dish and keep warm.
For Sauce- Pour off fat. Place pan on medium heat and add garlic. Stir a few seconds until it starts to color. Add marsala wine and stir to scrape any bits from bottom. Add broth and simmer about 3 minutes. Serve chicken with sauce.
NOTE- Watch the temperature on the chicken so it does not overcook. I did like the sauce with the chicken.
