     Garlic-Lemon Scallops

Ingredients
1/4c butter, or 2Tb butter and 2Tb oil
5 garlic cloves, minced
1lb large sea scallops
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon fresh lemon juice
Parsley, chopped
 

Instructions
Melt butter (and oil if using) in a large skillet over medium high heat. Stir in garlic, and cook for a few seconds until fragrant. Add scallops, and cook for about 2 to 3 min, then flip and cook for another 2 to 3 minutes.
Remove scallops to a platter, then whisk salt, pepper, and lemon juice into butter. Pour sauce over scallops to serve. Sprinkle with parsley.
NOTE Can serve with bread; over angel hair pasta with some asparagus, chicken broth, tomatoes, shallots, and white wine; crushed red pepper; try cooking garlic later after scallops have been cooked; used with mild fish instead; crumbled bacon;
