     Green Chile Sauce

Ingredients
2 tbsp oil
1/2 cup finely chopped onion
2 garlic cloves, minced
3 tbsp flour
1/4 tsp cumin
1/4 tsp black pepper
1 1/2 cups chicken broth
1 cup diced green chiles, drained
1/4 tsp dried oregano
 
1/2 tsp salt

Instructions
In a medium sauce pan heat the oil over medium heat until hot. Add the onion and garlic and cover, cook for 5-6 minutes. Stirring once or twice to make sure they aren't sticking. Cook until onion is soft, but not browned.
Stir in the flour and cook for 2-3 minutes, stirring constantly. Keep stirring until the flour is golden and toasty. Gradually add the broth, whisking constantly to smooth out any lumps. Add the remaining ingredients and bring to a boil. Reduce the heat to low, and simmer for 30 minutes, stirring occasionally. The sauce can be processed in a blender if you prefer a smoother consistency. Will keep in the fridge for up to two weeks.
Serve over enchiladas or burritos.
Serving Suggestions
If you prefer to use fresh chiles they need to be roasted and peeled.
