     Cooking for 2-Steak Tips with Red Wine Sauce

Ingredients
1 pound sirloin steak tips, trimmed and cut into 2 inch pieces
1 tbsp veg oil
2 tbsp unsalted butter
1 small shallot
1/4 cup dry red wine
1/2 tsp brown sugar
1/2 cup beef broth
1/4 tsp minced fresh thyme
 

Instructions
Pat the meat dry with paper towel and season with salt and pepper. heat oil in a 10 inchskillet until just smoking. Add the beef and cook until well brown and meat registers 120-125 degrees. This will take about 5-7 minutes. transfer to a plate and loosely cover with foil.
To the skillet add 1 tbsp of butter to the fat left in the skillet and melt it. Add the shallots and cook until softened. About 2 minutes. Add the red wine and sugar, scrapping the brown bits of the pan. Stir in the beef broth and Simmer for about 3 minutes. Stir in the beef juices that have accumulated on the platter.
Remove from the heat and whisk in the remaining 1 tbsp of butter and thyme. Season with salt and pepper to taste. Return browned steak tips to the skillet and coat with the sauce. Serve.
