     Ground Beef Tortilla Chip Enchiladas

Ingredients
1 bag tortilla chips
1 lb ground beef or chicken
2-3 cups shredded cheese
1 28-oz can red enchilada sauce
Can add diced green chilies, salsa, cumin, olives, onions, jalapenos, etc
 

Instructions
Pre-heat oven to 350°. Brown ground beef and drain the fat. Add optional mix-ins to the ground beef and mix completely. Pour a bag of tortilla chips to a large mixing bowl and gently break up the chips a little bit, still in large pieces. Add the beef mixture over the chips. Pour the entire can of enchilada sauce in the bowl. Add 1 cup of cheese and gently mix everything together, making sure all the tortilla chips are covered in sauce to properly soften. Prepare baking dish with non-stick spray. Pour entire mixture into the baking dish. Sprinkle remaining shredded cheese on top to cover completely. Cover with foil and bake for 30-50 minutes.
Serving Suggestions
sour cream, salsa, etc. if desired.
