     Southwest Stuffed Anaheim Pepper Casserole

Ingredients
4 Anaheim Peppers, cut in half, seeds and membrane removed
1/2 lb ground beef
1 TBSP taco seasoning
1 cup salsa or ranchero sauce
1 cup corn kernels
1 cup black beans
1/2 onion diced
cheese
 
Sour cream (optional)
Cilantro (optional)

Instructions
Cut peppers in half, remove seeds and membrane. Blanch for about 5 minutes in boiling water to soften peppers. Mix ground beef, diced onion, and taco seasoning in large skillet. Cook until beef it browned and onion is translucent. Add corn, beans, and salsa or ranchero sauce. Simmer together for about 10 minutes. Place peppers in greased 13 X 9 baking dish. Stuff peppers with meat mixture and place remaining meat mixture evenly over peppers. Top with shredded cheese of your choice. Bake at 350 for approximately 20 minutes. Serve with sour cream and cilantro if desired.
